Pumpkin Bread

This is the best pumpkin bread I have ever tasted, I just can't imagine a better tasting and simple recipe!

1 1/2 cups sugar

1/2 cup shortening (I use Crisco in the blue box)

2 eggs

1/3 cup water

1 cup pumpkin (cooked or canned)

2 cups flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1 tsp. pumpkin pie spice

Preheat oven: to 350 degrees.

1. Cream shortening and sugar.

2. Beat in egg, water and pumpkin.

3. Sift dry ingredients together and stir into pumpkin mixture.

4. Pour into well greased loaf pan (I use parchment lined loaf pans instead).

5. Bake for 90 minutes (yes, 1 hour 30 minutes!)

Tastes great! This doesn't last long in our household.

Freezes very well.

Optional Additions:

* nuts (chopped walnuts or pecans)
* raisins (Thompson Seedless Raisins, soaked in boiling hot water for a few minutes will plump them up)
